Tuscan Chicken
I love it when I find a recipe as delicious as it is easy to prepare. Or that Paul says he liked; he will never admit to actually enjoying a meal. I found this one, which appears to be a simple variation of Chicken Florentine, in my inbox courtesy of Delish. It was so easy I returned to a more traditional method of cooking for the first time in months. By doing so I came to the realisation that sometimes the Ninja and the air fryer need to take the back seat, although I’m sure I will try to adapt it at some point, both ingredients and cooking method wise. I did succumb to pressure cooking the pasta.
The best bit about this meal is how quickly it can be on the table since there is no long winded prepping to do. Although I used my judgement to reduce the quantities; as I am only cooking for the two of us; I did, for once, follow the recipe with no changes or substitutions. I just bunged the chicken in the frying pan and whilst it was cooking I prepped two good handfuls of tomatoes. The rest of the ingredients are just thrown in with no prep required. How easy is that? And I will admit to not precisely measuring the cream so my hand may have slipped a bit!
Although I served this dish with pasta it could be served with baby new potatoes or rice.
Ingredients
- 2 chicken breasts
- 1½ cups cherry tomatoes, halved
- 3-4 good handfuls baby spinach
- 125mls double cream
- ¼ cup Parmesan cheese, grated
- 1tsp dried oregano
- 1heaped tsp lazy garlic
- 1tbs olive oil
- 2 tbs butter
- Salt and pepper to taste
Method
- Heat the oil in a large frying pan.
- Add the chicken, season well with salt, pepper and the oregano and cook both sides for 7-8 minutes until golden. Remove from the pan.
- Add the butter to the same pan.
- When it is melted add the garlic and cook until fragrant, about 1 minute.
- Add the tomatoes and cook until they start to collapse.
- Add the spinach and continue to cook until it starts to wilt.
- Add the cream and Parmesan cheese, mix well to combine all the ingredients and simmer until the sauce has reduced and thickened.
- Return the chicken to the pan leave to simmer until the chicken is heated through.
- Serve with a pasta of your choice and enjoy.
And nice it was too.
