Parkin Puddings

It’s that time of year again. Halloween had barely passed before the sporadic crackle and pop of fireworks could be heard around the neighbourhood. November was here, Bonfire Night was fast approaching and I hadn’t made any Parkin! In my defence I have been quite busy over the last few weeks making steampunk outfits and attending various events so haven’t had much time for baking. However, all was not lost. Whilst sitting in bed the other morning trying to stay warm; we are trying to regulate our heating to a few hours a day until we really need to have it on for longer; I happened upon a recipe for Parkin puddings with pears and clotted cream which peaked my interest. It looked so easy to do; well Parkin is easy; and the ingredients are much the same as for Aunty Pam’s Parkin so, needless to say, I was out of bed and in the kitchen in no time, checking that I still had all the ingredients. Apart from the stem ginger and the pears I had the lot. Although my oatmeal was in the form of porridge oats, but a quick whizz in the blender did the trick. I decided that I would make the puddings for after Sunday dinner since it was actually November 5th and Lils, Harry and Joey now expect a pudding when they come round for dinner.

Since these puddings can be made in advance I was up early, for me, on the Sunday and clattering around the kitchen, measuring, mixing and making a mess. I was just about to warm the butter and treacle when Paul decided he wanted to put the kettle on and make tea! Then I discovered I only had five of my six ramekins so had to wait for Lils to finally return the last one. Even with all these annoying little hold ups it wasn’t long before my puddings were baking in the air fryer. Once they were done I let them cool slightly before turning out onto a plate ready to reheat after dinner. 

These scrumptious little puddings, served with lashings of creamy custard, were just the right size to finish off our meal and were a great success with the kids. I’ve never seen Joey demolish anything so quickly; he even beat Harry and that’s going some! And; since Paul declined due to the high sugar and treacle content and Netti doesn’t like Parkin; I have two left over which I am going to wrap in cling film and pop in the freezer for one of those times when I fancy a nice stodgy pudding.

  • 175g plain flour
  • 50g medium oatmeal
  • 1 heaped tsp baking powder
  • 2 tsp ground ginger
  • ½ tsp ground nutmeg
  • ½ tsp ground mixed spice
  • 75g light brown sugar
  • 100g butter or margarine
  • 2 tbs golden syrup
  • 2 tbs black treacle
  • 2 medium eggs, beaten
  • 150 mls warm water
  1. Sift together the flour, oatmeal, baking powder and spices. Set aside
  2. Add the butter, sugar, syrup and treacle to a pan and heat gently and stirring until smooth. Remove from the heat.
  3. Add the dry ingredients, the eggs and the warm water. Fold in until the mixture is well combined. 
  4. Divide equally between 6 ramekins.
  5. Pre-heat the air fryer to 160C then bake the puddings for 20 minutes. 
  6. When cooked leave to cool slightly, turn out into bowls and serve with custard, cream or ice cream.

Note: If using a conventional oven pre-heat to 180C/160C fan/gas 4 and bake for 20 minutes.
