Meatloaf With Creamy Succotash

I am always on the lookout for something to make with mince other than the ubiquitous shepherd’s pie, spaghetti Bolognese or chilli so this no fuss meatloaf recipe was right up my street. All I had to do was bung everything in a big bowl and squish it together with my hands. Since my air fryer is big enough to take my loaf tin I used that but when we had the two drawer air fryer I used a sheet of foil shaped into a loaf tin shape which worked just as well. This recipe makes enough for a family so I get to freeze half the meatloaf for another meal. I usually serve my meatloaf with mashed potato, vegetables and gravy but I wanted to try something different for a change. The second recipe is for a delicious Succotash I made to go with the meatloaf and celeriac mash. Since I couldn’t get hold of the Lima beans and wanting to keep my prep to an absolute minimum I adapted the original recipe to use tinned sweetcorn and butter beans; so the only real prep I had to do was chop the onions and bell pepper and crush the garlic so it really is a no fuss dinner!

  • 500g beef mince
  • 1 small onion, chopped
  • 1 cup breadcrumbs
  • 2 eggs
  • 60 mls milk
  • 2 cloves garlic, minced
  • ½ cup tomato ketchup
  • 2 tbs Henderson’s relish
  • 1 tbs Italian seasoning
  • 1 tsp dijon mustard
  • Pinch of smoked paprika
  • Salt & pepper to taste
  1. Mix all the ingredients together in a large bowl making sure they are well combined.
  2. Lightly grease a 2lb loaf tin and add the meat mixture to form a loaf.
  3. Pre-heat the air fryer to 190°C then cook the meatloaf for 30 minutes.
  4. When cooked allow to rest for a few minutes before serving.
  • 1 large tin sweetcorn
  • 1 14oz tin butter beans
  • 1 small onion, chopped
  • 1 small red bell pepper, chopped
  • 2oz butter
  • 1 clove garlic, minced
  • 80 pls double cream
  • Salt & pepper to taste
  1. Melt half the butter in a large pan. Add the onion and sauté until translucent.
  2. Reduce the heat, add the pepper and garlic and cook for a further 2-3 minutes.
  3. Add the sweetcorn and butter beans and simmer for 5 minutes.
  4. Add the remaining butter, the cream and the salt and pepper.
  5. Warm through and serve.
